Ingredients for the Chakalaka
- 2 tablespoons Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
- 1 onion, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 2 carrots, peeled and grated
- 2 chillies, finely chopped
- 1 tin baked beans
- 1 tablespoon curry powder
- 1 tablespoon Brown vinegar
- ¾ cup water
- salt and pepper
Ingredients for the Clover Amasi Waffles
- 2 cups flour
- 1 cup Clover Amasi Full Cream
- 1 cup milk
- 4 tablespoons Clover Springbok Unsalted Butter, melted
- 2 eggs, separated
- 3 teaspoons baking powder
- 2 teaspoons sugar
- ½ teaspoons salt
Instructions for the Chakalaka
- Add oil to a medium-high heated sauce pot, the add onion, green pepper, red pepper and chillies, sauté until golden brown.
- Add curry powder and stir, then add the carrots, vinegar, baked beans and water.
- Allow to cook on a light simmer for 2-3 minutes. Serve the chakalaka with Clover Amasi waffles.
Instructions for the Clover Amasi Waffles
- In a large mixing bowl, sift all the dry ingredients together.
- Beat the eggs yolks together with the milk and Amasi, then add the wet ingredients to the dry ingredients, mix well to combine.
- Add the melted butter and mix well. Fold in the stiffly beaten egg whites and bake in a hot waffle iron, until golden brown and puffed. Serve the waffles topped with chakalaka.
